
Gluten-Free Banana Bread Recipe (with chocolate chips)
One of the biggest things people miss when going Gluten Free is bread.
So here’s a good gluten-free banana bread recipe. And not only is this bread gluten-free, but it’s also vegan. However, this is a treat food as it is high in sugar but you only live once, right?!
This recipe tastes great as it is but experiment with it to suit your tastes. For example, add chopped nuts, raisins, or other dried fruit in place of the chopped dates. And for a real treat, you can add some gluten-free chocolate chips.
Ingredients:
- 1 & 1/2 Cups Gluten Free Self-Rising Flour Mix
- 1/4 Cup Chopped Dates
- 1/2 Cup Coconut Sugar
- 3 Very Ripe Bananas, Peeled & Mashed
- 1 Teaspoon Gluten Free Vanilla Flavoring
- 1 Egg
- 1/3 Cup Melted Coconut Oil
Instructions:
Mix all wet ingredients together first and then add all the dry ingredients together with the chopped dates and mix. Then when all ingredients are combined and wet then pour into a greased bread pan. Bake in a preheated 350 degree Fahrenheit oven (180 degrees for us New Zealanders :-)) for about 50 minutes until a knife inserted in the middle comes out clean. Check from the 45-minute mark on.
Once the bread is ready then pull it out and straight away dump the bread out onto a wire rack so it won’t stick while it’s cooling. And then when it’s cooled down enough to eat, slice it up and enjoy with some *real* butter on top. Yum!
