Gluten Free Chocolate Chip Cookies

Who doesn’t like a chocolate chip cookie?   But if you’re gluten-free then it’s tough to find a chocolate chip cookie that is slightly crispy on the outside, chewy and chocolaty on the inside.  You know the cookie with the perfect combination in every single bite. This gluten-free chocolate chip cookie is just what you’re looking for.  Ok, so here’s the ingredients for the gluten-free chocolate chip cookie…


  • 1 1/2 Cups Gluten Free All Purpose Baking Flour
  • 1 Cup Almond Flour
  • 1 Teaspoon Gluten-Free Baking Powder
  • 1 Teaspoon Gluten Free Baking Soda
  • ¼ Teaspoon Xanthan Gum
  • 3/4 Cup Butter Flavored Shortening
  • 3/4 Cup Brown Sugar, packed
  • 1/2 Cup Egg
  • 2 Teaspoons Gluten-Free Vanilla
  • 2 Cups Gluten-Free Chocolate Chips


Mix all the wet ingredients in one bowl until creamy (i.e. egg, vanilla, gum etc.). Then mix all the dry ingredients, including chocolate chips in another bowl. Combine the two and stir until all dry ingredients are wet. Drop by rounded tablespoons full onto ungreased cookie sheet. Bake in a preheated 375 degree Fahrenheit (190 degrees celsius) oven for 9 to 12 minutes. Remove to cool on a wire rack. Enjoy this gluten free chocolate chip cookie!
